I was hoping someone would be interested in modding Fire Emblem Three Houses to be straight. There are 10 characters I know of who are Bisexual. 3 male and 7 female.
Male Byleth
For the women you can romance, you could try making it so that female Byleth can't date them. For the men Male Byleth can romance, like Yuri, Lindhardt, and potentially Jeritza, you could make them into women by giving them female bodies for their models and make them only romanceable by male Byleth.

Clearly romantic
- Petra × Dorothea — the clearest example. Their ending says Dorothea became the person Petra loved most and that they spent their lives together. This is generally considered the game's most explicit non-Byleth same-sex romance.
- Dorothea × Manuela — their ending describes them retiring together and contains language about love. It's somewhat less explicit than Petra/Dorothea.
Strongly implied / potentially romantic
- Hubert × Ferdinand — their A+ support heavily suggests that they develop romantic feelings that neither says aloud.
- Linhardt × Caspar — their ending says they eventually settle down together. It's not explicitly called romantic, but it's one of the more suggestive male/male endings.
- Felix × Sylvain — their ending says they became so close that they eventually died on the same day, "as if" neither could live without the other. It's deliberately ambiguous.
- Dimitri × Dedue — their ending has them remaining exceptionally close, being regarded as family, and ultimately being buried beside one another. It's commonly interpreted as potentially romantic, but the game doesn't explicitly say so.
- Dimitri × Felix — also has unusually intimate language surrounding Felix's grief after Dimitri's death, though it isn't explicitly romantic.
